The most important thing when sharpening a knife is to raise a burr. A burr is a small amount of metal that is pushed from one edge of the knife up to the tip of the edge and folds over to the other side. This burr demonstrates that you have removed enough material to establish a new apex. Repeat the same sharpening effort on the other side for a symmetrical bevel.

To feel for a burr push your finger away from the cutting edge on the opposite side from the side you just sharpened. Do not push into the edge! - We shouldn't have to say that.
