Over the past few days I tried to find the best way to preserve and maintain the flavour of freshly picked mushrooms (check out the previous reel with @allthingsfungi) and I came up with a few ideas!
Also, I showed a quick method that it’s not the same as using a vacuum sealer but you get a similar final result.
JERKY MUSHROOMS:
- Salt
- Olive Oil
- Honey
- Lemon juice
*Dehydrate until crispy at the touch
FREEZING MUSHROOM:
- 500ml water
- 1 x Tbsp lemon juice
*soak for 10 min and steam till tender. Keep in the freezer for up to 1 year
CANNING MUSHROOM:
- 600 x g mushrooms
- 3 bay leaves
- 6 x garlic cloves
- 1/2 x cup rapeseed oil
- 1/3 x cup vinegar
- 3/4 x cup water
- 1 x Tsp salt
- Sterilised jars
*If you don’t do water or pressure canning, you can store it in the fridge for up to 3/4 weeks
