I asked my Brother to go and get two coconuts husked if he wants me to make something to eat for evening tea as he came several times asking me to make something for the evening tea. But to my surprise, there he was with a big basket with big number of husked coconuts that were enough for one whole week. So, I made cookies and incorporated pandan leaf flavour by kneading the biscuit dough with pandan leaf juice. Taking a considerably big ball of the biscuit dough and pressing it in between two 'halmilla' leaves (Trincomalee wood) gives you a beautiful round-shaped cookie with coconut circle in the centar made with dry roasted mixture of fresh coconut and sesame seeds. Topped with an almond and baked them for perfection. The result was an amazingly delicious soft biscuit with loads of different yet matching flavours. Once I made the same cookie by mixing the coconut and sesame seeds into the biscuit dough, but the result was not as tasty and rich flavoured as this time. This time the pandan-flavoured cookies came out much tastier and the flavour was enhanced as well.
When my cheeky little Brother came with a week's supply of husked coconuts, I knew that he was up to something no good. But that day was spent peacefully without any hassle. Voila!!! the next day “the cat jumped out of the bag”!. About 2 hours after breakfast I saw our Brother dear in our kitchen courtyard, planning for a great mission”. Suddenly he has remembered the scrumptious rice that was made at our Aunty's house! Since there was some extra rice, he ask me to make that rice for him.
I actually didn't have time to cook different rice dishes because I was getting ready to go to the fair! In fact he was the one who asked the recipe from Aunty that day.
It was a pleasant surprise when I came home as my dearest Brother had cooked the coconut rice and had laid in the lunch table as well. Trust me, ,the rice was so delicious. I truly felt sad for my Brothers reply when I asked him why did he ask me and troubled me to cook the rice when he could do it for such perfection and with such deliciousness. This silly boy said that even he knows how to cook, is not at all tasty unlike what I cook for him. Being such a talented boy and since he cooked the rice by himself I made an appetising salad to enjoy with his coconut rice. I squeezed out a handful of thick coconut milk with it's creamy sweet flavour and mixed with tomato pieces, cucumber together with shallots and bird eye chillies. Couldn't help smiling when I saw my dear Brother had started to eat lunch way before lunchtime also, complimenting the quickly made salad and coconut rice. Boys always will be boys!
